2 Diced Medium Potatoes
8 Eggs, Stirred
1 Chopped Onion
2 Chopped Peppers
2 Tablespoons Butter
First, add 1 Tablespoon of butter to your cast iron pan & put it over your fire. Melt it & spread it around.
Second, add the potatoes, onion and peppers. Cook until potatoes are tender. It takes about 20 minutes.
Next, add the 2nd Tablespoon of butter. Once it’s melted, add the eggs. To ensure even cooking time, cover the pan with lid or tin foil. Let the eggs cook about 4-5 minutes.
