Peanut Butter Oatmeal No Bake Energy Bites

Ingredients:

1 cup oat flour (2 cups Quick Oats)
1 cup crunchy or creamy peanut butter
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
2-3 Tablespoons honey or maple syrup
2 Tablespoons of mini chocolate chips

Directions:
1. To make oat flour: Pulse 2 cups of quick oats in a food processor for 15-30 seconds.
2. Add peanut butter, applesauce, vanilla extract, and honey
3. Pulse in processor until well combined, fold in mini chocolate chips.
4. Roll dough into 9 energy bites. Store in an airtight container in the fridge.
